Chicken fajitas, guacamole and bacon wrapped dates…

Begin with grilled chicken, I used a mix of tenderloins and breasts from Roseaurs, and a tomato, avocado, onion and bell peppers (just for aesthetics I use the green/red/orange).

Sauté up the onions to sweat them a little bit

Chop up the peppers to whatever dimension suit you best.

While the onions cook, prep the guacamole, dice the tomato and mash with the avocado. I added Lawrys guacamole seasoning to taste.

Add the chopped peppers to the onions and sauté another 5-8 mins.

Add the chicken to the mix (yes I discovered I need a larger sauté pan tonight)

Mix with water and pour into the pan. Simmer until most of the warner has boiled off.

Take a few medjool dates

Drawing a knife from tip to stem, you should be able to pull the seed from the center and out the top very easily.

With all the seeds out wrap in bacon. I usually cut my bacon in half first.

Foreman grills are excellent for bacon wrapped dates because the bacon gets trapped by the grill and can’t unwrap on you.

Once the bacon is done just stab with a toothpick and pull off the grill!
